Cleaning fish and smoking fish strips

Isa suggested that we show off just how we clean fish and prepare strips.

Here's a small king salmon, sometimes called a "jack" salmon. They're good eating.

Here's the fish on the cleaning table ready to go.

The fish is cleaned and the filets are ready to be processed into strips.

Here I am cutting the filets into strips.

The strips are marinated in a mix of teriyaki, garlic, and cayanne pepper.

The strips are hung in the smokehouse for a few days and then ready to eat.
