Isa suggested that we show off just how we clean fish and prepare strips. Top row: Here's a small king salmon, sometimes called a "jack" salmon. They're good eating. Here's the fish on the cleaning table ready to go, too. Second row: The fish is cleaned and the filets are ready to be processed into strips; here I am cutting the filets into strips. Third row: The strips are marinated in a mix of teriyaki, garlic, and cayanne pepper, then hung in the smokehouse for a few days and ready to eat.
